How do you find note-taking apps that aren't trying to be a second brain?

I've been trying to streamline my daily workflow so I can jot down quick thoughts without my laptop fan spinning up to maximum speed.

The problem is that every modern note app wants to be a database, knowledge graph, and project management tool rolled into one. They take forever to launch and force you into a whole ecosystem just to write a simple grocery list or daily task.

Is there a plain, lightweight note editor you use that launches instantly and just gets out of the way?
