Microsoft Windows 11 Clock + To Do app.
It's native, surprisingly comfortable to use (I expected less from Windows' out of the box apps).
And Focus Sessions in Clock app allow you to choose a task from To Do app to focus on, and sum the time spent on a specific task. And they accumulate if you don't finish the task in one go, but focus on it daily-weekly.

I use a very simple method. I use kitchen timer to split work into 45 minutes sessions. I have a sheet of paper on my refrigerator. On this paper I have a table where rows are days of the week and columns are projects I am working on. After each working session I put a cross in the corresponding project cell. This helps me analyze my time spent on tasks over the week.
