How do you currently extract text from YouTube videos?

I'm curious how everyone currently handles getting text from YouTube videos.

Do you:

- Manually type while pausing/playing?

- Use YouTube's built-in transcript (copy/paste the messy output)?

- Use a paid transcription service?

- Just skip videos that don't have captions?
